It's Hot!

Jesum-crow...it's been hot lately. It's been in the upper 80s the last few days, and the next few days are forecasted to be in the 90s! It's crazy; it's May-not late July. Global warming, eh? How's the weather treatin' you all? Nice, sunny, and slightly less hot than here, I hope.

Anyways, I've been really busy since my last post. Okay, maybe I'm over-exagerating. Let's say I have been moderately busy since we last spoke. You have to understand that I am a college student and it's summer. My definition of busy is a whole lot different than lets say a mom of four who has a full-time job. Okay, okay, enough rambling....what have I been up to?

Well, let's back track to friday morning. I was planning on sleeping in, but one of the local schools called me and wanted me to sub in the A.M. for preschool. I was thinking about turning the shift down because I had been been up late watching Grey's and Tivo-ed Marriage Ref being productive, but preschoolers are just so dang cute! The extra cash is also a perk. I ended up dragging my behind out of bed at 6am (after five hours of sleep) and subbed all morning for cute little preschoolers. They were ADORABLE! I don't think I want to teach preschool once I get my degree (heck, my degree isn't even in early child ed.), but I definitely think I want to stick to the younger grades.

After subbing, I headed downtown with my best friend. We got creemees (my stomach did not approve),  walked down by the waterfront, and did some window shopping. Afterwards, we headed back to her house and spent the afternoon soaking up the sun. I really wanted to go out with my friend and her sister for dinner and a movie, but unfortunately, I had therapy. On a friday night???? I know, ri-freakin'-diculous! Oh, the lengths we have to go to let Ed know he isn't welcome in our lives...

Saturday morning, I finally got to sleep in after a week of waking up at the break of dawn to sub and go to appointments. I think my body had gotten used to waking up early, though because I ended up waking up at quarter to seven....sigh. After having breakfast and lazing around for a while, I went to the farmer's market downtown with my mom. I didn't end up buying anything, but it was nice to stroll from vendor to vendor, soak up the sweet summer late May sun, and chit chat with my momma. On the way back from the farmer's market, we stopped at Starbucks, and mi madre oh so kindly handed me five buckaroos, so I could get one of these babies:

Right when I got home, my dad asked me if I wanted to go on a drive with him (to the middle of nowhere), so he could purchase one of the only IPad's left in the state. Oh, men and there electronics. Since I had nothing better to do, I agreed. I had to pack lunch for the road, though, because hey, a girl's got to eat! Two hours later, my pops and I returned, IPad in stow.

I wasn't even home for ten minutes before the phone rang. It was one of my besties calling me up, asking me if I wanted to chill. Of course, I accepted her offer. I ended up going over to her house and hanging out with her and another friend. I then went to church with her family. We went to a Catholic service. I'm Lutheran, so it was a little different than my usual service, but it was very nice and meaningful, nonetheless. Afterwards, we went back to her house and had pizza. Knowing that my belly doesn't like dairy and pizza has lots of cheese, I brought some lactaid with me. Dumb ol' me, though, forgot to take it until afterwards. My stomach wasn't very happy with me after the pizza. It was all good, though, we just ended up sitting around, listening to music, and reminiscing about good times. Oh, I love my friends!

Sunday, I went mini golfing with my mom in the morning. Yes, I know I'm twenty, but a girl can have fun, right? My mom then took me grocery shopping, and I got lots of essentials. I spent the afternoon sunbathing and reading The Last Song. The ending is really sad by the way : ( I had plans to go for a walk on a nature trail, but she was too tired after a 35 mile bike ride. What a lazy bum! I'm just joking. She is actually one of the most tenacious, dedicated people I know. Sunday night was spent with the 'rents watching Valentine's Day. How was it??? Eehhh, it was okay. I thought it was funny and cute, but I personally felt like there were two many stories going on. The movie lacked depth. On the flip side, there was some nice eye candy in this movie--Patrick Dempsey, Taylor Lautner, Eric Dane, Ashton Kutcher, Topher Grace, Bradley Cooper....oh yea, major perk!

This morning I woke up early again to do what else? Sub...of course! Today I subbed for 8th graders. It was actually kind of a boring day. I basically just watched over study hall all day. Most of the 8th graders were respectful, but a comment from one student kind of ticked me off. When he came in, he asked me, "You're the sub?". After I told him I was, he refuted, "but you're like 12". Try twenty actually! I know I look young, but 12, seriously?

After subbing, I came home and helped the mama in the garden for a while, showered, and played some wii with my dad.

As you can see, I have been "moderately" busy. I'm sure you are sick of me talking, though, so here are some food pics that have accumulated over the past few days. Okay, scratch that. My phone is being dumb and won't send all the lovely pics I have on it. I have a few pics from my computer but not many. Sorry guys : (

Typical Breakfast Yogurt Mess-pre mixage

Tried this bar..didn't like it. It's trans fat free, cholestorol free, dairy
free, and gluten free. Oh yea, it's also taste free!

I'm off to watch Little People Big World and the premiere of The Bachelorette. Even though there are more guys to gawk over on The Bachelorette, I personally prefer The Bachelor. It just seems more real and sincere. Which show do you gals prefer?

Have a good night y'all!

Meal Plan

Hey blogworld!

So, I had a supper busy day today, so a full post isn't happening. I ended up subbing this morning (after staying up way too late last night), shopping in the afternoon with my bestie followed by sunbathing (again with the bestie), then going to therapy. Also, I ate ice cream today, and although it tasted delicious, my stomach is not a happy camper at the moment. Point being: a full post is not in the works tonight.

Anyways, I was asked on a previous post what my current meal plan looks like. After reading the comment, I realized I never shared my meal plan with you all, so here it is:

9:30 – 10:00 Evening Snack
Vitamuffin cut up in Greek yogurt and ½ tablespoon PB
OR
Muscle Milk and 2 rectangles Graham crackers or a serving of Teddy Grahams

I've been slowly working with my nutritionist to increase my calories. I have a feeling that a major cal increase is going to be happening next week, which I'm not too excited about, but I know is necessary. I just wish ED would understand that too.

I should also note that I don't always follow my meal plan to a tee. I try to keep the cals the same, but I honestly get sick of eating the same thing everyday, and sometimes the food on my meal plan isn't available. I try to do my best to keep stuff nutritionally the same.

Well, that's all I got for you guys tonight. I need to try to go eat dinner, but I honestly don't know if my stomach will let me. I can barely even sit up or move at the moment, much less scarf down some food.

Why does dairy hate me so much? I'm so kind to it and try to consume it reguarly, and look what I get in return....psssssh!

Happy Friday Everyone!

Sunshine Lovin'

Hello fellow bloggers!

I'm sorry I haven't posted much lately, but I've been pretty darn busy. What have I been up to? Well, I have been substitute teaching A LOT this week. I subbed for 2/3rds of a day monday, a full day Wednesday, and this morning. I really like subbing because I enjoy working with kids, the hours are flexible, and I am planning on being a teacher! I subbed for middle schoolers all this week, and honestly, I prefer working with younger kids (they're just so dang cute!), but I made the best of subbing for the middle grades. Middle schoolers always try to take advantage of subs, and they especially like to give me a hard time because I look really young? I swear that almost every student asked me how old I was and then gave me a puzzled look when I said I was twenty.

One day this week, I was subbing for 6th graders. In the afternoon, the superintendent came into my classroom, came up to me, and asked "Hun, where's your teacher?". I was thinking, "Seriously, I know I look young, but do I really look like a 6th grader?" I think not. I guess it's good that I look young for my age, and it is something I will appreciate when I get older, but being mistaken for an 11 year old kind of irks me a bit. I have been told that I may look older when my weight is restored. This should provide some motivation to put on the poundage, eh?

Anyways, I also caught up with some old friends this week. On Sunday, I spent the day with one of my good guy friends from high school. He's always had a huge crush on me, but I don't like him. Sometimes it's awkward hanging out with him because of this, but I think he knows we are never going to be an item and has accepted our relationship as just friends. Here's a picture of us at the lake:

My friend set the timer on his camera, but didn't quite make it back
up to the tree in time for the pic...haha

On Tuesday, I had my weekly appointment with my nutritionist. Not much news here. Weight went up a bit (no idea how much) and I got a slight calorie increase. After my appointment, I caught up with two of my best girlies from high school. We went to lunch at this lovely little sandwich shop. I had a turkey sandwich on homemade whole wheat bread with a salad drizzled with honey mustard vinaigrette. The food was good and there was a lot of it (and I mean a lot!). I wish I would have taken a pic for you all, but I didn't want to whip out my camera in front of my friends. They know I have an eating disorder, but I don't really talk to it about them. They don't know I have a blog either. I'm glad ED didn't get in the way of our afternoon, though. After lunch, we looked around shops in the area and went to Starbucks. It was too early for my afternoon snack, so I didn't get anything (I wasn't hungry anyways), but I had a great time sitting out in the sun with my ladies.

Speaking of the sun, the weather has been gorgeous here lately. With the exception of yesterday, it has been hot and sunny all week. This afternoon, I had nothing better to do, so I sat out for almost the whole afternoon, soaking up the late-spring sun, reading The Last Song, which is a ballin' book by the way. I just started reading it yesterday, and I am already 250 pages into it. I can't wait until the movie comes out on DVD, so I can watch it : )

Inspired by the awesome weather today, I took a little walk around my yard, and snapped some pics of what mother nature had to offer. I was surprised that I actually entertained myself for over a half an hour just by walking around my yard and taking pictures. Here are a few of the pics I snapped:

Mama's beautiful flowers; she's such a gardner!

Big a** maple tree in the front yard

Glass thing in the flower garden

My pup in the grassless side of the backyard (despite the sunny
appearance, it's in the shade, so grass doesn't grow there : (  )

Butterfly (in the momita's veggie garden)

Okay, this was taken inside, but the lilacs came from
outside.

Okay, I am sure you all are getting sick of me rambling, so I'm going to hit you up with some food pics. All of the food shown was eaten sometime over the past four or so days. And, don't worry; I've eaten more than this, but I didn't feel the need to take a picture of every little morsel I put in my mouth. Note: Some of the pictures were taken with the cellie while others were taken with my camera.
A very early morning breakfast eaten in the car on the
way to subbing-Nature's Path Optimum Energy Bar of
the peanut butter varitey (this was sooooooo good!) and a
'nanner, just chillin' in the center consul.

Afternoon Snack-Clif Z Chocolate Chip Bar with sliced apples
and cinnaninominnnnn (I know the spellings wrong, but it's so
fun to say that way!)

Remainder of another afternoon snack-whole wheat english muffin
with Laughing Cow Light Swiss Wedge and cinnamon

Yapplesauce with pretzels (eaten as part of dinner)

Typical breakfast--Brown Cow Plain Greek Yogurt, Kashi Golean,
PB2, a banana, and a bunch of cinnamon......yummy in ma' tummy!

Dessert Yogurt Mess--Chobani Greek Vanilla Yogurt, Deep
Chocolate Vitatop, and P.B. & Co. Mighty Maple Peanut Butter
(it's hiding)

One of the best afternoon snacks all week--Jello Sugar Free Chocolate
Pudding, PB2, and Nabisco Graham Crackers....it was freakin' delicious.
I do have to say though that the pudding was a little thick to serve as a
powdered peanut butter base (it was hard to mix). Next time, I may add
some water to the pb powder ahead of time.

My lunch from today--Fiber Gourmet Rotini, Tribe Roasted Red
Pepper Hummus, red pepper flakes, and organic peas (pre-mixage)
with Barbara's Rite Rounds and a sliced apple with what else
but cinnamon...'twas a good lunch indeed!

Well, I'm going to wrap up this post. I could go on forever, but I don't think anyone would appreciate that. I think I may go to the grocery store and find some type of ice cream treat to enjoy on this hot afternoon. Then tonight is the season finale of Grey's......AHHHHHH!!!! It looks soooooooooooooo good; I can't wait! As for my agenda tomorrow, I have plans to go downtown and shop with my best friend, and then I have therapy in the evening.

Best couple evahhh!

See ya lata' alligataas!

Wait, don't leave yet! I actually wrote this post up a few hours ago, but I didn't post it. Since then I have been to the store to get ICE CREAM!!!!!!! Well, actually I got soy ice cream--Turtle Company So Delicious Mini Vanilla Ice Cream Sandwiches. I contemplating getting real (as in dairy) ice cream sandwiches, but dairy and I haven't been BFFs lately, especially with my tummy, so I'm trying to reduce my dairy consumption. Anyways, I had one of these soy babies as part of my afternoon snack. Here's a pic:

Tiny but de-freakin'-licious!

As amazing as the bar was, I needed to get more cals into my afternoon snack, so some more Barbara's Rite Rounds it was. I guess I can't get enough of these buttery round ceackers today, can I?

Be Happy! Get it....it's a smiley face...no? Okay.

Okay, well I'll shut up for real this time. I'm sorry for such a long and random post. I'm not sorry, however, that it's almost the weekend. I've been busy working (a.ka. subbing) all week.

Happy Thursday everyone!

A Quickie

No, the title of my post does not refer to anything sexual; it in fact, describes the length of this post. You and your dirty minds...haha.

Sorry about the lack of postage, but I've been a busy chica lately. If I haven't been substiute teaching, I've been going to appointments, and if I haven't been going to appointments, I've been catching up with friends.  Have no fear, though! I've been accumulating many food pics and stories to share with you all. Stay tuned boys and girls : )

Until then, be HAPPPY!

A Little Bit of Everything

Happy Sunday bloggies! For most everyone the term "happy Sunday" is probably an oxymoron, and quite honestly, I'm not a huge fan of Sunday's either.....but hey, a girl can be optimistic and unreasonably cheery, right?

Okay, I know I haven't blogged in a few days, but I'll do you the favor and spare you every little detail of my whereabouts, eats, etc. because I don't want to bore you to death. Instead, I'll just mention a few highlights of this weekend.

Unfortunately, most of my friends were busy this weekend or gone (looosseerrsss...haha-not really), so I ended up spending most of my time this weekend with the 'rents. Yesterday, my mom and I went to see Letters to Juliet. Was it good? OMG, YES!!! Please, do your self a favor and go see it NOW! It was rather predictable but really funny and cute.

I want a man like this!!!

I also went out to dinner with the madre last night. We went to Chili's, and I got the Margarita Grilled Chicken. It was good, but I wish the dish had more rice and less beans. I mean, I love beans, but the bean to rice ratio was about 5:1....a little bit unporportionate, eh? I know that beans are really good for you because they are chalk full of protein, but the chicken in the dish also has a lot of protein. Also, I eat a lot of greek yogurt and peanut butter, so in no way, shape, or form am I lacking in the protein department.

Chili's Margarita Grilled Chicken--I didn't remember to take a pic until
half way through my meal. Sorry gals, but I was hungry!

Speaking of greek yogurt, I am starting to wonder if I am lactose intolerant. Why? Well, I've been eating a lot more dairy over the past few months and to put it quite frankly, I've been having digestive issues, especially right after I eat dairy. I should talk to the doc about this. If I am lactose intolerant, I hope some lactase supplements will do the trick because I don't know if I can live without dairy. Don't get me wrong; I love soy milk and similar products, but greek yogurt?!?! I'm obsessed, and until I see soy greek yogurt on the shelves, this girl will keep devouring the fluffy greek stuff despite what her digestive system is telling her.

Like greek yogurt, I also love creemees. For all of you who do not reside in the wonderful (being optimistic here) state of vermont, a creemee is basically a soft serve ice cream cone....only better, haha! Even though I love creemees, I hadn't eaten one in a long time because "Ed" thinks they are unhealthy. I talked to my therapist, though, and she encouraged me to eat one this week. Well, today I did! I skipped lunch in order to have a creemee. I when my therapist recommend I eat a creemee, she wasn't implying that I should skip a meal to do so, but "Ed" was only willing to let me eat a creemee if I skipped lunch....so I guess Kristy won one battle and Ed won one battle too. A tie is better than a loss right?

This isn't my ice cream, hand, or even picture for that matter. I took
a picture of my raspberry maple creemee, but my phone won't send it
for some reason...oh, poo! This creemee looks pretty good, though.

The creemee was very good by the way, and it was a beautiful day to enjoy ice cream with my lovely father. The whole time I was eating it, my eating disorder kept reminding me how unhealthy it was and how it just contained empty calories, but I gladly drowned out Ed's commentary and enjoyed every bite of my maple raspberry goodness! (My stomach isn't feeling so hot now, though.....lactose intolerance??)

Anyways, I have some food pics that have accumulated over the past few days. I could bore you with all the details about my activities the days, hours, whatever that I ate the food, but you would be bored to tears, so I'll just let you look at my pics.

Fiber Gourmet rotini, with peas and roasted red pepper hummus--
This was eaten friday along with Ritz whole wheat crackers
and an apple.

Self-assembled restaurant yogurt mess--I ordered plain Dannon yogurt
and Cheerios from the restaurant, and I brought my own Banana. Then
I sliced, poured, and mixed (the bowl the gave me was a little small, so
I kind of made a mess....oops!)

Chobani vanilla yogurt, cut up dark chocolate Vitatop, and P.B. &
Co. Mighty Maple peanut butter--My mouth did a little dance and sang
a little song while eating this : )

Hey, Riley (my dog) isn't food. He's pretty cute, though,
right? Just look at those puppy eyes...

Well, I'll let you guys go and enjoy the rest of your weekends.... although for me and all other college students the fact that it is the weekend means diddily squat because everyday feel like it is part of the weekend.

Is It Fall Yet?

I know...it isn't even summer yet, so I shouldn't want it to be fall already. I'm just really bored, not going to classes everyday and seeing all my friends at school. The sad thing is that the spring semester doesn't technically end until tomorrow. I was basically done last week, but I have one exam left tomorrow morning at 8 AM. Yep, you heard that right; this little girl has to be awake, cheery, and have her thinking cap on by 8 AM tomorrow morning. Honestly, though, I'm not too worried about the exam. The exam is for my "Math for Elementary Educators" course and we basically just get tested on basic elementary/middle school math. The real test for me is going to be getting up at the crack of dawn and getting myself together...haha

Anyways, I thought I had a bunch of food pics for you all, but I just checked my email and only two of the pics sent after I spent a half an hour slaving away at my phone, trying to send the pictures to my computer. I could go get my phone and try to resend the pics, but seeing that I'm feeling kind of lazy today my phone is charging up a flight of stairs, on the other side of the house, I think I'll leave you with the two food pics that did send. Sorry people : (

                                                                           Meal Pic #1
My Ballin' lunch from yesterday--2 oz Fiber Gourmet Rotini
with 1/2 cup of peas, 2 TBSPs of roasted red pepper hummus
(can't remember the brand), and Keebler Club Crackers, & apple
slices with 'lots of cinnamon. Twas a good lunch indeed!

Meal pic #2
Breaky this morning-Strawberry Yoplait Greek Yogurt
slice banana, 1 cup of Kashi GoLean, and a healthy dose
of cinnamon (can you tell that I'm a little obsessed with
cinnamon?)

Just to let you know, today wasn't a very exciting day. I registered for a summer class (World History 1) which I still don't know if I'm going to take (a story for another day), helped my mom grocery shop (highlight of my day....sad I know), got together my textbooks to sell, and studied for my math exam. I was supposed to go see a movie with a boy I think I may kinda' like a guy friend, but the loser poor guy had to cancel last minute because he had to help his mom around the house. Hmmm...should I believe his excuse? Either way, I was pretty disappointed when he bailed on me. I was really looking forward to getting lunch with him and seeing the Backup Plan (even though it got bad reviews). I tried not to let the last minute cancellation get me down and make the best out of my day. I do have to admit, however, that all the free time/lack of time with friends spiked my anxiety levels. I didn't let my anxiety interfere with my eating, though. I have stuck to my meal plan today thus far and intend to for the rest of the day.

While speaking about food, I'd like to mention a new combo I tried today (I forgot to take a pic)--1/4 cup rolled oats, 2 TBSPs of PB2, and 1 TBSP of Smucker's No Sugar Added Strawberry Jam. The Verdict???? Not very good; I wouldn't recommend this oat combo. I couldn't really taste the peanut butter flavor because it somehow got lost in the oats. The jelly wasn't bad, but I think I prefer brown sugar as a sweetener.

Okay, well I'm going to go play some Wii with my pops. Kick his ass I shall. Not really....I love him

It's almost the weekend everyone; hang in there!

A Weighty Issue

Well, hello, hello hello!

Before I talk about my day, I wanted to share with you all a small epiphany I had today. Although I know my realization won't make Ed go away (right away anyways), I think it is a step in the right direction. So, today I was weighed by nutritionist and unfortunately I lost weight (more on this later). Later in the day, I was thinking about how a lot of my Ed recovery progress is measured by how much weight I gain. The more I thought about this, the more stupid it seemed to sound. Don't get me wrong here; I fully understand that my weight needs to be monitored for health reasons, but recovery shouldn't be measured in pounds. Instead, it should be measured by having a normal relationship with food and getting the old me back. Luckily, I think my nutritionist and therapist understand this and just try to use weight as an indicator of recovery.

As the day went on, I kept thinking about the concept of weight more and more. I began thinking about weight in general--as in not related to my eating disorder. After a whole lot of thinking, I realized that the concept of weight as a measurement of health, beauty, happiness, etc. is so arbitrary and dumb. People always try to lose weight or be a certain weight, thinking that the numbers on a scale will bring them happiness. Really, weight is just a measure of the amount of gravity applied on the body and nothing more. A certain weight will not bring happiness, health (in a lot of cases), or anything magical. It's just a number on the scale.

As I said before, I realize my realization won't rid Ed. I know that my eating disorders are emotional disorders and aren't all about weight. Having that said, I really hope that recognizing the triviality of weight and numbers on the scale will give me a boost forward in recovery.

Okay, with the heavy stuff out of the way, let me talk about my day.

I woke up early this morning to a....yep, you guessed it yogurt mess. I couldn't decide whether I wanted Peanut Butter Puffins or Kashi GoLean in my yogurt mess this morning, so instead of contemplating over cereal choices for a half an hour, I came up with a brilliant solution: HAVE BOTH! So, my yogurt mess consisted of Peanut Butter Puffins, Kashi Go Lean, a plain Brown Cow Greek Yogurt, a nanner, and pb2
Both my taste buds and belly greatly appreciated this bowl of yumminess!

After breakfast, I showered and headed to an appointment with my nutritionist. As I briefly mentioned earlier I lost weight. I'm not really sure why, though. I had been following my meal plan for the most part. Granted, some afternoon snacks were skipped in order to eat out for dinner, but I made sure that I ate more at dinner to compensate for the missed snack. I'm not sure how much my weight was done (I do blind weigh ins), but I'm afraid the weight loss may lead my therapist to think I need to go inpatient, which I really don't want to do. We'll see, I guess. My therapist is out of town for the week, so I have almost a week before I see her. My nutritionist upped my meal plan a little bit, so hopefully I'll be able to put the weight back on by the time my therapist gets back. (I have an appointment with my nutritionist again next week, where I will be weighed, the day after I meet with my therapist.) Oh, I forgot to mention that I snacked on a Kashi Golean Crunchy Bar of the chocolate almond variety during my appointment.

Once my nutritionist appointment was over, I headed to a natural market in the area to shop around and pick up a job application. Despite spending a good amount of time in the store, I only ended up purchasing one item...this natural ramen stuff (I can't remember the name at the moment). I'll give the name and post pics when I try it.

Early this afternoon, I headed back to school solely to have lunch with two friends. Hey, a girl has got to socialize! I'll be honest. The food sucked. I had a turkey sandwich with stale whole wheat bread and no cheese (I have no idea why this particular dining hall doesn't put cheese on their sandwiches) and an overripe, mushy apple. I was too busy chatting it up with mi amigos to take a pic. Sorry guys.

After lunch, I headed to the video store in hopes of renting me a copy of the movie The Terminal. To my dismay, though, the movie was checked out...urrrrrrrgggg. It was all good, though, because this girl got the movie Catch Me if You Can. I had seen it before, but it was a long time ago.

I then headed home, printed off some job applications and filled them out. Then I watched the movie I rented with my pops. It was really long but still good. I'd recommend it to anyone who hasn't seen it. While gushing over Mr. Decaprio on screen, I snacked on a triple chocolate Chocolite Protein Bar and  Stretch Island Fruit Company Cherry Fruit Leather. I have to say that the peanut butter bar enjoyed yesterday was a lot better than the chocolate variety. The chocolate bar was still good, nonetheless.

Ain't he darlin'?

Like the flowers?

Okay, now I'm going to go eat dinner. This girl is going to have an uncrustable (it's unthawing as we speak I blog.) with pretzels or soy crisps, and some aappleswwacce--minus the porkchops.

My uncrustable just chillin'

Then I'm going to proofread a paper and send it to the prof'. I plan on finishing the night in front of the tube watching 19 Kids and Counting, snacking on a Vitatop and greek yogurt WITH some peanut butter mixed in. Yep, peanut butter was added to my evening snack on my meal plan today. Ed is kicking and screaming at the sight of this addition, but I love peanut butter, so I'm just going to ignore him : )

Have a good night loves!

Chocolite?? Choco-licious!!

Well, hello my fellow bloggies and bloggettes! First, let me apologize in advance for another (almost) post. I'm really trying to take pics of my eats, but it's finals week and let's face it: I have a bad memory. Okay, with that established, let me talk about my day.

For starters, I'm not a fan of the frigid temps. It only got up in the 50s today and yesterday it was snowing for crying out loud. And to that, I only have one thing to say: Dear Weather, it's May--not January, February, March, or even April for that matter. Snow is simply unacceptable. I want 70s and sun. Got it? Get it. Good!

Despite the rather frigid temps, I had still had a semi productive day. I woke up around 8am and had a yogurt mess for breakfast. I won't bore you with details or pics because it pretty much looked the same as the yogurt messes on my previous three or four posts. On a side note, though, I tried peanut butter bumpers in my yogurt mess yesterday morning, and I must admit that they were pretty good. I probably won't be substituting them for my usual GoLean every morning but most definitely a few times a week for a nice change up.

After breakfast, I showered and headed back to school to drop off my history final (paper). I was glad to hand that 12 page beast (not that long...I know) to my professor and be done with it. Afterwards, I headed over to the on campus childcare center to do a preschool child observation for my child development class. Although the observation itself wasn't that interesting, a little boy I interacted with before made my day. When I was looking for the sign in desk, this little, five? year old by took my hand and in his own words, "tooked me there" (so cute) and then kissed my hand when we arrived. What a cutie! A little young for me--I know--but he is definitely going to be someone's Prince Charming someday.

Once I did the actual observation, I am happy to say I completed the accompanying paper right away. While typing away, I drank a Muscle Milk Light--not my favorite morning snack, but definitely a convenient way to get the cals in. And let me suggest that the makers of Muscle Milk should consider changing it's name to Brain Milk, because while sipping that baby, I managed to crank out a 10 page paper in about an hour and a half. Yep, you heard that right; no procrastination here!

With my paper out of the way, I headed home to have me some lunch. I decided to try a new lunch option on my meal plan today and had a Western Alternative Bagel with light Laughing Cow Cheese, reduced fat Keebler Club Crackers, no sugar added Jello Dark Chocolate Pudding, and a sliced apple with cinnamon. Wow, that's a mouth-full (no pun intended). Really, though, it was a lot of food even though the cal count was right were it needed to be. Well, actually that is a little bit of a white lie; I was supposed to have another laughing cow with the crackers. After seeing how full my plate was, though, I couldn't use another laughing cow. (Yes Ed, you one this time...get over it!)

During the afternoon, I also baked some chocolate cookies for my dadio and went to Homegoods and bought two new bowls. I may add picks later, but I'm just too lazy to get off my bum, find my camera or phone, and snap some picture-oo-nies at the moment. Sorry loves. Let me assure you that they are cute, and as a bonus, the two of them only set me back $5.83--Cha-ching!

Okay, now on to the highlight of my day. Well, about a week ago, I ordered a bunch of food online, and the package arrived a few days ago. One of the things I ordered was Chocolite Protein Bars and today I finally got the chance to try one as part of my afternoon snack...the peanut butter variety. Let me just tell you that it was heaven in bar form. It basically tasted like a peanut butter twix. It was a little less crunchy and more chewy. To sum, it up--it was A-M-A-ZING!

Moving on...I just finished a game of Mario Party with my dad, and I am happy to say I kicked his along with the two computer players' (Peach's and Wario's) behinds. Yep, I won!

Now, I'm about to have dinner, watch Little People Big World, and eat an evening snackarooni! Tough Life...I know! Really, though, I need to find a job. The semester isn't even over yet (technically), and I am already bored. Sigh. Well, I guess this chica will be poundin' the pavement soon. Oh, I did work on my pathetic resume today. That's a start.

Before I leave you all, I just want to briefly tell you about yesterday a.k.a Mother's Day. I ended up having a really good day with the mama. In the morning, I took her to this mother daughter thing that my sorority was hosting. She enjoyed it a lot, and I have to admit that I did too : ) I also ordered her flowers and balloons that came yesterday afternoon. For the price, the flower arrangement was rather dinky. I called the place I ordered them from last night and they assured me that they would send a bigger bouquet today, but it's almost 8pm and no boquet......oh rats! Well, someone will be getting a nice lil' call from me in the morning. Anyways, my mom also liked my card and what I wrote. She even started to cry while reading my card. Oh, I love my mommy! To finish out Mother's Day we rented and watched Leap Year. Even though the movie got bad reviews, I thought it was cute. Predictable? Yes. Still worth it? Definitely! Additionally, it was my mom's kind of movie. What did you all think of Leap Year? Have you even seen it?

Okay, well I'm going to let you all go, but I'll talk to you soon!

The Computer Ate My Post!

Ughhh...I just spent a buttload of time writing up a nice, long post for you all. I was just about to post it, and my computer froze. Usually, when my computer freezes or I "x" out the window before forgetting to post, the website automatically saves it....not this time, though.....Dang it!!!

As much as I love you all and love blogging, this girl has things to do and needs to get some food in her belly. No real post tomorrow people. Sorry : ( I'll try to make up for it tomorrow.

Have a lovely Friday night everyone!

Pigskin??

Hey peoples,

I bet the title of this post has you all turning your heads or just thinking "Ewww...gross; this girl eats pigskins." Well, no....I'm glad to say I'm not that weird. I'll explain the title of the post more in a little bit. First, I want to give a little recap of my day.

I woke up at 8am this morning after an okay night of sleep. I woke up on and off all night last night.....annoying I know. It was all good, though. You know why???? Yep, you guessed it. I got to devour a ballin' yogurt mess this morning. My yogurt mess consisted of a container of brown cow plain greek yogurt, 'lots of cinnamon, 2 Tbsps of peanut butter 2 (omg...I love this stuff), 3/4th cup of Kashi Go Lean, and a nanner-bannaner all sliced up. Oh yea, and of course I mixed this baby up because they call it a yogurt MESS for a reason.

I meant to take a picture after I made it, but my tummy was rumblin', so I didn't end up snapping a pic until half way through the bowl of yumminess.

By the way, I'm sorry about the phone pics. I have a camera, and I should use it, but truth be told: I'm kind of lazy in the technological department. Sorry : (   I'll start using my camera soon. I'll also start snapping more pictures of my eats for y'all. I just have been really busy with exams and all.

Speaking of exams, I had my first exam today: child development. I studied pretty hard for it (i.e. read each chapter like 10 times), but some of the questions were tough. Personally, I felt like a lot of the questions were subjective even though they were multiple choice. Does that tick anyone else off? When teachers give multiple choice exams where each question has more than one possible answer (but only one is right)? Okay, now I'm just rambling and getting confusing on you all. I apologize. Moving on.....despite the ambiguity of the questions, I think I did pretty well on the exam. The essay questions were super easy, so that section of the exam will boost my grade.

Oh, I forgot to mention that before the exam, I drank kefir for my morning snack. This was my first time drinking kefir and it may be my last. I mean I didn't find the taste offensive, but I thought it just tasted like an okay bottled yogurt smoothie. Also, the sugar content was really high....over twenty grams for an 8 oz bottle?? No thank you. (I realize that Ed may have been talking a little there). I don't know; maybe I just need to try a different kind or try blending/mixing kefir with something else. Any thoughts?

By the way, the above pic isn't mine. I got it online--gotta love google images....haha! Also, I drank an 8 oz bottle--not the ginormo bottle shown in the pic.

Anyways, after my exam, I met two of my guy friends for lunch. I ate half of a turkey sandwich. The cafe at my school makes huge sandwiches. I told that to my nutritionist, so she agreed that it was okay to only eat half of the sandwich. I also had a strawberry Nutrigrain bar. Personally, I feel like these bars aren't all that healthy because they contain a lot of sugar and artificial crap. My nutritionist doesn't think they are that bad, though, so I am trying to eat them every now and then. They taste pretty good, so maybe all that sugar isn't so bad after all.

After lunch, I threw around the pigskin (aka football)...hence the title of the post. Despite my scrawny arms (yes, Ed my arms are scrawny--not fat), I can throw a pretty nice spiral. The guys I was playing with were pretty impressed....haha! I actually had a pretty good time playing with them. Too bad the sunny skies turned grey and it started poring twenty minutes after we started throwing the ball around. Oh poo : (

I thought about going to the gym this afternoon just to weight lift (not do cardio), but at the last minute, I decided not to. My doctor, therapist, and nutritionist have all told me that I am not allowed to exercise. I'm not really sure if light weight lifting counts as exercise, though? What do you gals think? Whatever the answer, I decided not to anyways. I think I should talk to my doctor first. I do have to say, though, that  not being able to do anything (active) is really frustrating. I feel like I am eating all this food for energy, but I am not able to use any of it. You know what I mean?

Deciding not to exercise, I made a trip to a local organic grocery store and picked up a bunch of goodies. I forgot to snap a pic again (sorry), but some items purchased include greek yogurt, peanut butter bumpers, Nature's Path crackers, Snyder's individual pretzel packs, and organic cinnamon apple sauce....yummy in my tummy!

After spending way too much time in the store, I headed home and made me a lil' snacky poo. A piece of whole wheat toast with a laughing cow wedge (spread on the toast of course), topped with cinnamon. It was a yummy snack that was sweet and savory at the same time. I also munched on an apple.

For the last hour or so, I've been acting like a bum by--well--sitting on my bum....lol. I watched today's episode of Rachel Ray, which I tivo-ed (is that a verb?) and read a lot of your lovely blogs.

Oh Rachie...ya know I love ya'!

Now, I'm about to make dinner. Something easy for sure....probably peanut butter and jelly, with pretzels, and apple sauce. Sound good? I think that would be a yes. Then I'm going to watch Grey's tonight while snacking on some greek yogurt with a crushed up chocolate vitatop. My belly is going to be having a party tonight!

Oh, before I leave you all (I know you are thinking this post is never going to end....sorry), I just want to briefly talk about my birthday. To put it simply, it was really nice. I spent time with both friends and family. I also got a lot of lovely gifts--the majority from my parents (they go overboard every year). I think my favorite present is a tiffany's necklace I got from my parents. It is a heart necklace with an aquamarine stone (see pic below) I also got other good stuff, but birthdays are about celebrating life--not the presents.

I also went out to dinner last night with my rents. We went to this nice restaurant, and I had a large salad, teriyaki chicken, and a baked potato. I ate all of the salad and chicken and half of the baked potato. Take that Ed! No regrets either. Great birthday!

Okay, I'm done writing my book post for today. Have a lovely evening everyone (if anyone is reading)! Any fun plans?

Happy Birthday To Me!

Yep, that's right; it's my 20th birthday people! I guess that means I no longer have an excuse to act like a dumb-ass or just like a two year old for that matter.

Not to be a Debby-Downer, but unfortunately my birthday falls right in the middle of exam week. I don't actually have any exams today, but I have a big child development exam tomorrow morning. You know what that means, right/ Yep, the library will be keeping me a lot of company on the twentieth anniversary of my birth!

Although I have been studying a lot today and will be studying some more, a girl can't spend her whole birthday in her library (no matter how many exams she has to study for). So, what does the rest of my b-day entail? Well, let me spell it all out for you gals:

-After studying for a few hours straight, I am currently catching up on all of your lovely blogs and writing a little post of my own.

-In about a half an hour, I am meeting a friend at a little cafe on campus to eat lunch. Even though I have had a turkey sandwich almost every day this week, I am craving one again, so I'm pretty sure my lunch will include a turkey sandwich. Sorry, turkeys...you know I love you, but you are just so dang yummy.

-After lunch, I'm going to go home and chill for a while (a.ka. be lazy).

-Then, it's present time...yay!

-Tonight, my rentals are taking me out for my birthday dinner. We are going to a nice, local, fancy restaurant. Part of me wants to stay home and eat food that I am food I am comfortable with for my birthday, but I know that is just ED taking, so I am going to enjoy my birthday dinner as much as possible.

-Then....party time?!? Probably not : ( Don't get me wrong, I enjoy a party every once in a while, and I definitely think my birthday is an occasion where a party is appropriate, but my early morning exam tomorrow means that this little chica is going to call it an early night.

Well, that's about all folks! I just thought I'd do a birthday post.

I hope everyone is making their way through exams alright. And for those of you already finished with your exams and enjoying the summer sun....I hate you. No, I'm just kidding. Let's just say I'm slightly envious. However, I am actually kind of sad/nervous for the semester to end. Although I am not at school all the time anymore (thanks to ED), I am really start to feel at home here and I enjoy the daily routine plus seeing my school friends every day. I guess I just have to adjust to my summer schedule, which hopefully will involve a job to keep me busy. And if not, I see a bunch of fun, lazy days with my amigos and mi madre. Sorry for all the spanish guys!

See ya later!

Sorry for going MIA

Hey Everyone! (not that I think anyone follow's this blog, but I can dream, right?)

Anyways, I'm sorry for not posting for weeks on end. I'm just not sure if I am ready to be a "regular" everyday blogger yet. I mean, don't get me wrong. I love reading everyone's blogs and I love writing about myself. I just am not sure if I am far enough along in recovery to blog myself yet (on a regular basis, that is). I guess I'll just play it by year.

So what's been going on in my life since last time we talked? Well, a lot! Good stuff and bad stuff I guess. Starting with the good, my meal plan has adjusted a few times over the last month or two, and I am consuming more calories since the last time I posted. Take that Ed! I am also almost finished the semester at school, so Wooohooooo!

Okay, I guess I should move onto the bad. Unfortunately, my Aunt passed away a few weeks ago. It wasn't completely unexpected because she had been sick for a while. However, it wasn't definite that her condition was terminal until right up until the end. Thankfully, she passed away surrounded by a lot of loving family.

After finding out about her death, I ended up going back out West with my parents for the funeral. Although this may say weird to say, it was a beautiful funeral. There was a chapel service followed by a ceremony of life at the country club to which she belonged. There were so many people there who really cared about her. I think it is safe to say that she will be well remembered by her friends and family.

Despite the unfortunate circumstances, the trip back out West was really nice. It allowed me to take a nice break from school and spend quality time with a lot of my beloved family members. Additionally, I was able to follow my meal plan and not think about food a lot. Take that Ed again!

Well, I just thought I'd post an update about what's going on in the world of Kristy. I think I may try to blog some more this week. Maybe I'll post some pictures of my eats as part of my most recent meal plan.

Until next time,

Stay awesome y'all!
